ROSEMARY PIADINA

Piadina, Italian flatbread, quick and easy to prepare, enriched with rosemary and honey.

This traditional Italian flatbread is ideal for breakfast, lunch, and dinner, with both sweet and savory flavors.

Piadina pa is good for the body and good for the mind.

Our piadina recipe is enriched with rosemary, which improves memory and mood, as well as raw honey, a natural healing nectar.

Turmeric has been added to the recipe due to its known and researched health benefits, from fighting viruses to fighting cancer.

Lightly fried in olive oil, the bread keeps well if covered and stored correctly. Olive oil is one of the best natural preservatives.

The total preparation and cooking time is approximately 1 hour, including rising. However, if left to rest overnight in a stainless steel pot, in a cool place and with the lid on, the bread acquires a better texture once cooked.

 INGREDIENTS

  1. 180 g plain flour

  2. 140 g whole wheat flour

  3. 150 g warm water

  4. 1 tablespoon honey (click)

  5. 30 g extra virgin olive oil (click) (with rosemary)

  6. 5 g baking powder

  7. 6 g sea salt

PREPARATION

Place a bowl on a clean surface. Add the dry ingredients and mix well.

Add the liquids and mix until the mixture starts to clump. Begin to knead the dough in the bowl until it dries well and forms a ball.

Place the dough on a floured surface and knead for about 10 minutes. Personally, I find that 3 Mister Marley songs are just the right amount of time to knead.

Form a ball by folding the dough over itself and place it in a container covered with a damp cloth or lid. Let it rest in a warm place for a minimum of 15 minutes, or longer if you're not in a hurry.

After rising, knead lightly for a couple of minutes.

Separate the dough into 8 uniformly sized balls.

Roll out thin discs, the size of a large hand, 1 mm to 2 mm thick.

To cook the bread, add enough olive oil to cover the bottom of a large flat surface. Heat over medium heat and cook for approximately 1 minute per side until the bread puffs up and turns golden.

Once cooked, drain off excess oil and stack them vertically in a metal colander over a bowl.

Regarding mental health, baking bread can be a mindful and meditative exercise, calming the mind and helping us to focus on what is truly important... making and creating something that is as unique as us and tasty 😋
